The Delta – a new Wicker Park restaurant & cocktail bar – is slated for a June opening
The Delta – located in the former Monarch space at 1745 West North Avenue in Wicker Park – is new restaurant and cocktail bar slated to open in June.
The Delta is an ode to the Mississippi Delta region that is widely known for beginning in the lobby of the Peabody Hotel in Memphis, Tennessee, that stretches south and ending at Catfish Row in Vicksburg, Mississippi.
The Delta is owned by Eldridge Williams, and he’s been working on the concept of The Delta for three years. Williams, who was raised in Memphis, is currently a manager at Girl & The Goat. Prior to that Williams, 35, was the venue manager at The Promontory, manager at Bangers & Lace, and a manager at multiple restaurants for The Fifty/50 Restaurant Group.
Adam Wendt, 33, is the executive chef/partner at The Delta. Wendt is currently the executive sous chef at Dusek’s Beer & Board. Wendt was also the opening the executive chef of Bangers & Lace in Wicker Park.
The Delta is rooted in “unapologetic country cooking” specializing traditional Delta style red hot tamales that are a staple of the region. These tamales are simmered in a spicy broth (instead of being steamed) and are made from cornmeal (instead of masa). Wendt will do a traditional beef brisket red hot tamale and will also have a rotating list of five to seven chef-driven red hot style tamales as well.
Wendt will also serve other chef-driven share plates inspired by the Delta region that is a melting pot of African Americans, Mexican, Chinese, and Italian influences that have shaped the region’s cuisine.
Adam Kamin, 34, is the beverage director/partner at The Delta. Kamin is currently the Head Bartender at Bottlefork and was previously the beverage director at both Graham Elliot Bistro and Dale Levitski's Sprout.
Kamin will offer about 15 opening specialty cocktails in three categories – smashes, classics, and originals. Eight tap lines will pour craft beers, the wine program will be limited yet approachable, and there will be a collection of vintage bourbons as well.
The Delta will seat approximately 40 in its interior and an additional 30 on its back outdoor patio.
