West Town Bakery & Dark Matter Coffee bourbon barrel aged chocolate bars and toffee bark collaborations on sale on Cyber Monday
 
  West Town Bakery executive pastry chef Chris “Tex” Teixeira has created three different limited-edition chocolate bars utilizing bourbon-barrel aged coffee from Dark Matter Coffee and espresso toffee bark that will go on sale on Cyber Monday which is December 1.
 
The three chocolate bar types are the “Black Splash 35%”, “Black Splash 41%”, and “Black Splash 64%”. The percentages in each of the names are the cocoa concentrations of the chocolate with the 35% tasting most like coffee with a heavy addition of cream and sugar with bourbon notes, the 41% tasting like coffee with a splash of cream with bourbon notes, and the 64% tasting more bittersweet like black coffee with bourbon notes.
 
The Unicorn Blood Toffee Bark is made with finely ground Dark Matter Unicorn Blood espresso, 64% cocoa, and pink peppercorns.
 
Teixeira -- along with West Town Bakery chocolatier Ian Regino – worked the last three months perfecting the recipes for the chocolate bars and toffee bark.
 
The coffee that Dark Matter Coffee procured to use in all three coffee bars is from the El Rosario Bourbon farm in El Salvardor that was harvested by farmer Federico Pacas. The Pacas family are sixth generation coffee framers known for growing experimental coffees. The normal notes of this coffee are cocoa, spice, and lemon. Once this coffee is aged inside the bourbon barrel, the notes will change to pear, oak, and vanilla. 
 
Each of the individual chocolate bars will cost $4.50 each and a set of all three will cost $12. The Unicorn Blood Toffee Bark costs $6.50. All will be available for purchase at midnight on Cyber Monday (December 1) at both WestTownBakery.com and DarkMatterCoffee.com.
 
Also all three of the chocolate bars and the toffee bark will also be on sale starting December 1 at West Town Bakery & Diner (1916 West Chicago Avenue), West Town Bakery (15 East Ohio Street), Dark Matter Coffee The Mothership (738 North Western Avenue), Dark Matter Coffee Star Lounge Coffee Bar (2521 West Chicago Avenue), and Dark Matter Coffee Osmium Coffee Bar (1117 West Belmont Avenue).
 
Teixeira – who is also the executive pastry chef at Homestead On The Roof – will also incorporate the bourbon barrel aged coffee chocolate into both a tasting menu and a prix fixe menu at the literal-farm-to-table restaurant.
 
The chocolate will be featured in Teixeira’s new seven-course dessert tasting menu that costs $25 per person with an optional alcoholic beverage pairing that costs an additional $15 per person. Homestead On The Roof executive chef Chris “Chip” Davies’ new five-course prix fixe dinner will feature the chocolate as the fifth course dessert. The five-course prix fixe dinner costs $50 per person with an optional alcoholic beverage pairing that costs an additional $25 per person.
