The Lake Bluff destination pushes the envelope with a series of inventive new preparations

, helmed by Executive Chef John des Rosiers, recently unveiled a delectable new menu, filled with dishes that boast the flavors and colors of ingredients enjoyed only during the warmer months of summer. “It was time for a major shift, so we changed the format slightly, wrote 14 brand new dishes, and reduced the overall size of the menu by 15%.  All of this is designed to produce the most consistent, stunning menu we have ever attempted,” said des Rosiers of the updates.

Guests at Inovasi can still expect to see classics such as sustainable Shrimp and Grits, and Equus Oaks Farms Squab, but will also be greeted with a variety of new small plates including Chilled Cucumber Soup with dill oil, watermelon, and pink peppercorn crème fraiche ($9); Teal Lake Arugula with housemade Inovasi bacon, roasted hazelnuts, crispy thin potatoes, cave aged cheddar, and blood orange vinaigrette ($8); and Yakitori Chicken Thigh with lightly whipped goat cheese, brown butter roasted radish, and English cracker ($7); and Foie Gras Torchon with chilled La Belle Farms foie gras, bourbon poached leeks and basil lychee drops ($I7).

Des Rosiers’s team has also put together even more tantalizing dishes such as Hand Cut Veal Carpaccio with whipped Korean garlic, chicken crackling, yuzu juice, Priorat olive oil, and cracked pepper ($12); Konro Grilled Shrimp & Cucumber made with Japanese sumi charcoal grilled shrimp, chilled cucumber, lime zest, and coconut Thai peanut vinaigrette ($11); and new House Made Sausage with Pinn Oak lamb, Jude Becker pork, polenta, raw shaved artichokes, and sake vinaigrette ($8).
